Ingredients:
1 1/2 cups fresh red thai chilies
1/2 cup fresh green thai chilies
1/2 cup cilantro
1/2 cup mint leaves
4 cloves garlic, sliced
1 in. ginger, minced
2 tablespoons sesame seeds, roasted
2 tablespoons musturd seeds, roasted
1 teaspoon cumin seeds
1 tablespoon mango powder
1 teapoon pepper corn
1 teaspoon timur (szchwan pepper)
2 tablespoons musturd oil
2 tablespoons lemon juice
1 teaspoon suger
1/2 teaspoon asafoetida
Salt to taste

Instructions:
In a blender, combine all the ingredients into a paste with a desired texture. If desired hot and sour, increase the amount of lemon juice (using tamarind paste is a bit more authentic).
